Skillet Asparagus
Metric Ingredient Imperial
500 g asparagus, trimmed & cut into 2 in (5 cm) pieces 1 lb
50 ml butter 1/4 cup
250 ml small mushrooms 1 cup
30 ml lemon juice 2 tbsp
1 ml dried tarragon 1/4 tsp
- salt & pepper to taste -

In large pot of boiling water; cook asparagus for 1 minute.  Drain and refresh under cold water.  Drain again and pat dry.

In large skillet; melt butter over medium heat.  Cook asparagus and mushrooms, stirring frequently, for about 5 minutes or until tender.  Stir in lemon juice, tarragon, salt and pepper.
