Greek Potatoes

Metric Ingredient Imperial 4 potatoes, baked 4 250 ml feta cheese, diced 1 cup 50 ml black olives, pitted & finely chopped 1/4 cup 30 ml olive oil 2 tbsp - squeeze of lemon juice -

In a small bowl; mix together feta, olives, oil and lemon juice. Cut large cross into potates and squeeze to open.  Spoon feta mixture inside potatoes and serve.     Servings: 4
