One Bowl Veggies

Metric Ingredient Imperial 500 g potatoes, peeled & cut into chunks 1 lb 500 g sweet potatoes, peeled & cut in chunks 1 lb 500 g carrots, peeled & thinly sliced 1 lb 50 ml olive oil 1/4 cup - salt & pepper to taste -

In a large pot; add potatoes, sweet potatoes and carrots.  Bring to boil.  Reduce heat and cook gently for 20 to 35 minutes or until very tender. Drain well, reserving a little cooking liquid.  Mash with potato masher.  Add in oil, salt and pepper.  Add small amount of cooking liquid if mixture is too thick. Servings: 6
