In a large skillet, add olive oil. Heat over low heat. Add onion, garlic and parsley. Cook for about 10 minutes or until tender and garlic is light gold. Stir occasionally. Stir in shrimp. Turn pieces when mostly pink on bottom side, after about 1 minute. Cook until almost done, about 1 more minute. Stir in tomato and cook just until juices flow and shrimp are white throughout, about 1 to 2 minutes. Remove skillet from heat and season with salt and pepper to taste.
