Red Wine Broccoli

Red Wine Broccoli
Metric Ingredient Imperial
1 large bunch broccoli, cut into florets 1
10 pitted black mediterranean-style olives, chopped 10
4 ripe plum tomatoes, chopped 4
50 ml olive oil 1/4 cup
75 ml red wine 1/3 cup
15 ml parmesan cheese, grated 1 tbsp

In a large saucepan; gently mix broccoli, olives, tomatoes, oil and wine together.  Bring to simmer over high heat for about 1 to 2 minutes.  Cover and reduce heat to low.  Cook for 15 to 18 minutes, stirring occasionally until broccoli is tender.

Stir in cheese and season with salt and pepper to taste.
