Shredded Beet & Gorgonzola Salad

Shredded Beet & Gorgonzola Salad
Metric Ingredient Imperial
3 large raw beets 3
20 ml red wine vinegar 1 1/2 tbsp
75 ml olive oil 1/3 cup
125 ml gorgonzola cheese, crumbled 1/2 cup
30 ml parsley, chopped 2 tbsp

Wash and dry beets.  Peel with vegetable peeler to remove skin.  Shred beets in food processor.

In a large bowl; add vinegar.  Whisk in oil.  Add beets and toss to coat well.  Add cheese and parsley.  Toss gently to combine.  Season with salt and pepper to taste.  Serve immediately.
