Sweet Pepper Pasta

Sweet Pepper Pasta
Metric Ingredient Imperial
1 onion, diced 1
15 ml ginger, freshly grated 1 tbsp
30 ml canola oil 2 tbsp
1 sweet red pepper, seeded & diced 1
1 sweet yellow pepper, seeded & diced 1
1 sweet orange pepper, seeded & diced 1
2 garlic cloves, crushed 2
125 ml fresh basil, chopped 1/2 cup
500 ml favourite pasta 2 cup
- parmesan cheese, grated -

In a large skillet; saute onion and ginger in oil over medium heat for 5 minutes or until onion is translucent.

Add peppers and garlic and continue to saute for approximately 15 minutes or until peppers are soft.

Add basil, mix thoroughly, and saute for 5 minutes.

Cook pasta according to package directions for al dente.  Drain well.  Toss with pepper mixture.  Serve sprinkled with cheese.
