Black Bean Soup

Black Bean Soup
Metric Ingredient Imperial
1 can black beans, drained (14 oz / 398 ml) 1
1 can diced tomatoes in juice (14 oz / 398 ml) 1
500 ml water 2 cup
175 ml celery, chopped 3/4 cup
175 ml onion, chopped 3/4 cup
5 ml garlic, minced 1 tsp
- pepper to taste -

In a large saucepan; combine beans, tomatoes and water over medium heat.  Cook for 10 minutes.  With immersable blender; puree until mostly smooth.

Add celery, onion and garlic.  Season with pepper.  Cover, reduce heat to low.  Simmer for 20 to 25 minutes or until vegetables are tender.
