Chicken and Veggie Bake

Metric Ingredient Imperial 5 ml vegetable oil 1 tsp 500 ml chicken breast, boneless & diced 2 cup 250 ml onion, diced 1 cup 250 ml carrot, diced 1 cup 250 ml celery, diced 1 cup 250 ml corn kernels 1 cup 500 ml broccoli, chopped 2 cup 1 can cream of mushroom soup (10 oz / 284 ml) 1 250 ml milk 1 cup 250 ml dry brown rice, cooked 1 cup 250 ml cheddar cheese, grated 1 cup

In a large skillet, heat oil over medium-high heat.  Add chicken, onion, celery and carrots.  Saute for 10 minutes or until chicken  is fully cooked. Add corn, broccoli, soup, milk and cooked rice.  Mix well.  Pour mixture into large casserole dish.  Sprinkle with cheese.  Bake in preheated 350 F (180 C) oven for 30 minutes or until bubbly. Servings: 6
