Simple Roasted Red Peppers
Metric Ingredient Imperial
6 large red peppers 6
125 ml extra virgin olive oil 1/2 cup
4 garlic cloves, minced 4
15 ml parsley, chopped 1 tbsp
- pepper to taste -
5 ml sea salt 1 tsp

Place peppers on hot grill.  Cook until they blister and are tender.  Place in paper bag and seal top.  Set aside until cooled.  When cool, remove skins, slice open and remove core and seeds.  Quickly rinse under water and pat dry with paper towel.  Cut into strips.

In a small bowl; mix oil, garlic, parsley, pepper and salt.  Toss with peppers and serve.
