Fresh Tomato Salsa
Metric Ingredient Imperial
500 g ripe plum tomatoes 1 lb
1/2 medium red onion, finely chopped 1/2
2 garlic cloves, minced 2
2 jalapeno peppers, seeded & minced 2
50 ml cilantro, chopped 1/4 cup
30 ml fresh lime juice 2 tbsp
5 ml salt 1 tsp

Cut the tomatoes in half crosswise.  Gently squeeze out as much of the juicy, seedy pulp as you can.  Chop tomatoes finely and place in a bowl.

Add onion, cloves, peppers, cilantro, lime juice and salt. 

Let the salsa sit, at room temperature, for at least 30 minutes before serving with tortilla chips.
