Sheinelle Jones conquers NYC marathon - see pics!

Mondays are tough. The weekend is never long enough and it can be hard to jump back into the weekday mentality. But the beginning of a new week is also an opportunity to start fresh and recommit to your health goals.

To motivate you to make time for yourself this week we're serving up some major inspiration. First up: We're in awe of all the runners who completed the New York City Marathon this weekend. Especially our very own Sheinelle Jones, who has been sharing her journey to 26.2 miles.

"I want to prove that just the average girl, we can do it," she said about her motivation for running the race. "I am 4'11". I am not a model. I'm not a runner, but we can do this!" And this weekend — she did it! Find out how it went and see some emotional photos from the day.

Plus, when complications from untreated diabetes led to a toe amputation, Robert Jones knew he needed to make a change. That's when he made some significant changes to his diet and lifestyle and lost 285 pounds.

Need a little inspiration to get moving? TODAY's Sheinelle Jones wanted to prove to herself that she can do hard things. And she did it over the weekend, completing the New York City marathon.

She shared what the experience of running the marathon has meant to her in a recent Instagram post: "It is my sincere prayer that I encourage someone to try something new, perhaps outside of his or her comfort zone … whether it's in the form of exercise, or even a new musical instrument … whatever it is. I have to be honest, some days have been *really* tough for me … but here we are. Running has often been the therapy I didn't know I needed. Almost there!"

Between the herbed goat cheese and the hot honey drizzle, this veggie-packed flatbread is bursting with flavor. To make a heart-healthier flatbread, use a whole-grain pita or naan for the base, and serve it with a chickpea salad. To make the salad, toss canned chickpeas, drained and rinsed, with chopped tomatoes, cucumber and a bottled vinaigrette.

Amputation motivates 1 man to lose 285 pounds: 'I'm never going to lose another body part'

Robert Jones was an active kid and despite loving sweets, he was so thin he was given the nickname "Bones."

But at 18 years old, he got a job at a fast-food restaurant and began to gain weight. Over time, his weight kept creeping up, and by 2010, he weighed 500 pounds. Along with sleep apnea, he eventually developed liver cirrhosis, high blood pressure, lymphedema, digestive issues, kidney issues and neuropathy.

His wake-up call came in 2021. He thought his right big toe was infected and went to the emergency room, figuring they would give him some pills and send him home. Instead, he was diagnosed with diabetes, and complications from the disease meant his toe needed to be amputated.

That's when he made some significant changes to his diet and lifestyle and lost 285 pounds.
