Recipe of the Week
Chicken and pepper soup with baguette
If you're a bell pepper enthusiast, you'll love this recipe, as the soup base is made from blended roasted red bell peppers. They give the soup its rich red color, which comes from carotenoids, namely lycopene and beta-carotene. Lycopene is a powerful antioxidant, and your body converts beta-carotene into vitamin A. Antioxidants help fight harmful free radicals in your body.
This recipe also contains chicken, so you already know it's going to be high protein ("chicken" and "high protein" are basically synonymous). How does low saturated fat sound, too? On the other hand, it's high in sodium. If that's a concern, consider using low sodium varieties of hoisin and soy sauce.
