Turmeric, sweet potato, and egg breakfast bowl
I work from home, so I can make and enjoy breakfast without feeling crunched for time. If your mornings are more fast-paced, you might need to set aside a few extra minutes for this recipe since it takes about 20 minutes. But that's only because you have to wait for the sweet potatoes to soften and scramble some eggs. Everything else comes together easily.
This dish is quite colorful, and in the food world, colors = nutrients. You can find beta-carotene, vitamin C, and potassium in sweet potatoes; phosphorus, B vitamins, and choline in eggs (plus protein); calcium, vitamin K, and lutein and zeaxanthin in arugula. To top it off, turmeric has antioxidant properties, and pistachios are a good source of healthy fats.
