Flexitarianism Cuts to the Meat of the Matter
Meat or something vaguely like it has been making headlines as reports of "pink slime" relieve the nation of its collective appetite. But the real and far bigger story where meat is concerned isn't what we're eating, it's what we're not eating. Here's how you can (and why you should want to) serve up some meatlessness for you and yours.

Gastric Plastic
Let's be clear: There's no denying the miracles provided to humanity by space-age polymers. Plastics do so many clever things, there's no imagining life without them. But here's one surprising feat they need to stop performing--the trick of adding the things they're made from to the foods they help us store.

How Food Saved a Town
A few years ago, the town of Hardwick, VT was fading fast. Like so many communities in isolated corners of our state, it had lost many of its primary businesses, including dairy farming and logging. With few jobs available for the town's 3,000 people, Main Street slowly closed up shop, and Hardwick began sinking into the same oblivion that has claimed so many other American small towns. Then the town discovered food.

Guide to Low-Carbon Eating
Sensing growing public concern about the climate crisis, executives at PepsiCo, owner of the Tropicana juice brand, asked a simple question: How much carbon does a half gallon of orange juice add to the atmosphere? The answer was about 3.75 pounds, the same as driving a car 3.75 miles. The research highlights two important points we'd all be wise to consider: What we choose to eat has an enormous impact on our carbon footprint. And in most cases, where our food comes from isn't as important as the kinds of products that we choose to put in our shopping carts.

Soup Up Your Diet with Superfoods
A great way to start a culinary correction that will deliver us from the perils of unhealthy eating is by crafting a diet rich in the most nutritionally-dense foods available. While there's no official "superfood" roster and every nutritionist has his or her favorites, a review finds that certain foods make virtually every Top 10 list. We've compiled them here, along with some easy-to-make recipes.

What do Vegans Eat?
"Mom, I'm hungry!" In my experience, these are probably the three most uttered words in the English language. As a mother of children who seem to eat non-stop, I can tell you that a considerable amount of money, time, and planning goes into the food choices for our family of four. Particularly because we are vegan. Was that a gasp I just heard? When being vegan comes up in conversation, I am used to curious omnivores asking, "So what do you eat?"
