Pork Roast

Metric Ingredient Imperial 1 kg pork roast 2 lb 1 garlic clove 1 1 large onion, sliced 1 6 medium potatoes, quartered 6 4 carrots, cut into large pieces 4 - salt & pepper to taste - 1 bay leaf 1 125 ml apple juice 1/2 cup

Peel garlic and rub roast with it. Place meat in a deep baking dish. Arrange vegetables over and around meat. Sprinkle with salt and pepper. Drizzle apple juice over meat and vegetables. Cover and bake in preheated 325 F (160 C) for 2 to 3 hours or until meat is tender. Serves 6
