Two Potato Layer Bake

Metric Ingredient Imperial 4 large potatoes, peeled, chopped & cooked 4 2 sweet potatoes, peeled, chopped & cooked 2 250 ml chive & onion flavoured cream cheese 1 cup 125 ml sour cream 1/2 cup 1 ml salt 1/4 tsp 1 ml pepper 1/4 tsp 50 ml parmesan cheese, shredded 1/4 cup 50 ml cheddar cheese, shredded 1/4 cup

Place white and sweet potatoes in separate bowls. Add half each of the cream cheese and sour cream to potatoes in each bowl. Season with salt and pepper. Mash with potato masher until creamy. Stir half of parmesan cheese into white potatoes. Stir half of cheddar cheese into sweet potatoes. Alternately layer half each of the white potato mixture and sweet potato mixture in 1 quart (1 L) glass baking dish. Repeat layers. Bake in preheated 375 F (190 C) oven for 20 minutes. Sprinkle with remaining cheeses, continue baking 5 minutes or until cheeses are melted. Serves 10
