Metric Ingredient Imperial 1 package corn muffin mix (8 oz / 225 g) 1 115 g monterey jack cheese, diced 1/4 lb 125 ml frozen corn kernels 1/2 cup 1 green onion, chopped 1

Prepare corn muffin mix according to package directions other than baking. Into muffin mix mixing bowl; stir in cheese, corn and onion.  Pour batter into lightly greased baking dish.  Bake in preheated 400 F (200 C) oven for 15 to 18 minutes or until golden brown. Servings: 6
