Cucumber Wedges

Metric Ingredient Imperial 2 medium cucumbers 2 250 ml tomatoes, chopped 1 cup 40 ml red onion, finely chopped 3 tbsp 50 ml ranch dressing 1/4 cup - salt & pepper to taste -

Trim ends from cucumbers.  Cut each cucumber in half lengthwise.  Remove seeds, then cut each half crosswise in half. Arrange wedges, cut side up, on serving platter.  Top evenly with tomatoes, followed by onion.  Drizzle dressing over each cucumber wedge. Servings: 4
