Maple Apple Slaw

Maple Apple Slaw
Metric Ingredient Imperial
125 ml italian dressing 1/2 cup
15 ml grainy dijon mustard 1 tbsp
10 ml pure maple syrup 2 tsp
2 apples, cored and quartered 2
1.3 L green cabbage, shredded 5 cup
250 ml carrot, shredded 1 cup
125 ml green onions, sliced 1/2 cup
125 ml pecan pieces 1/2 cup
- salt & pepper to taste -

In a small bowl; whisk dressing with mustard and syrup.  Toss apples with 2 tablespoons (30 ml) dressing mixture.

In a skillet; saute apples over medium-high heat for 2 to 3 minutes or until tender crisp.  Cool until easy to handle and chop.

In a large bowl; add cabbage, carrot, onion, pecans and apples.  Toss with remaining dressing.  Best served the next day.  Cover and refrigerate for up to three days.
