Spinach Breakfast Wrap

Metric Ingredient Imperial 1 whole wheat tortilla 1 3 egg whites 3 125 ml cheddar cheese, shredded 1/2 cup 50 ml fresh spinach leaves, stems removed 1/4 cup

In a small skillet over medium-high heat; add tortilla.  Heat until just warm on both sides.  Remove tortilla and keep warm. In same skillet, sprayed with small amount of cooking spray, add egg whites.  Scramble until just about cooked.  Add cheese and stir until just melted. Place warmed tortilla on plate.  Top with half of egg mixture, spinach leaves and then remaining egg.  Roll up tortilla.  Servings: 1
