Chicken Barley Soup

Chicken Barley Soup
Metric Ingredient Imperial
1 large onion, diced 1
15 ml vegetable oil 1 tbsp
125 ml pot barley, rinsed & drained 1/2 cup
2 L chicken stock 8 cup
1 bay leaf 1
6 carrots, peeled & sliced 6
4 celery ribs, sliced 4
500 g cooked chicken, diced 1 lb
50 ml fresh parsley, chopped 1/4 cup
- salt & pepper to taste -

In a large stockpot; saute onion in oil over medium heat until translucent.  Add barley and stir until thoroughly coated in oil.  Add stock and bay leaf and bring to boil.  Turn down heat and simmer on low for 1 hour.  Add carrots, celery and chicken.  Continue to simmer for 20 minutes or until vegetables are tender.  Add parsley, salt and pepper to taste.  Remove bay leaf.
